New versions of Caribbean spice blends and seasoning sauces
Because that fiery favourite of the Caribbean – the Scotch Bonnet chili pepper – can be quite overpowering in a spice mix, and because some people find it hard to cope with a lot of chili, I’ve toned down the Scotch Bonnet in my spice mixes and even given you the option to replace it with its less potent relative, Cayenne chili pepper. But I’ve compensated by adding more flavour and aroma with more of other Jerk Spice ingredients such as allspice, cinnamon, cloves, nutmeg, and paprika. Even if you like a lot of chili in your food, I think you’ll be pleasantly surprised at how the other fabulous flavours in Jerk Spice sing out, when you lower the heavy drumbeat of chili. And if, even after you’ve tried my new version, you still crave more of that unique Scotch Bonnet flavour, you can always add more!
